Video Explanation:

1. TPA test: texture profile analysis, also known as twice mastication test, mainly simulates the mastication movement of human mouth to perform twice on the sample, so as to analyze the texture characteristics of the sample: hardness, brittleness, viscosity, cohesion, elasticity, stickiness, mastication and recovery.

2. Non viscosity: opposite to viscosity, it means that the probe will not produce negative force after the sample is deformed.

3. Application: Determination of physical properties and quality of bread, cake and other non sticky samples.
